• Hi guys, I hope everybody had a wonderful start into the year 2023.
    Mine was great, with new plans and new goals to be achieved.
    In fact, today I had a very busy day and completely forgot to eat lunch. But hey, was I in for a treat when I got home?! ???? I was starving and ready to dig into a hearty dinner. And as if that wasn't enough to make my taste buds dance, I discovered the last few pieces of New Year's Eve cake in the fridge. Talk about a win-win situation!!!!
    As I sat down to enjoy my dinner and cake, I couldn't help but think about how lucky I am to have such a delicious meal in front of me. And to top it all off, I get to enjoy the final remnants of a festive celebration. It's like the cherry on top of a very busy, but very satisfying day.
    Here's to more rich dinners and leftover holiday treats in the future! ????✨

    If you're like me, you're probably spending a lot of your time these days in the #kitchen. And while it can be #exhausting at times, there are definitely some perks to all this home cooking.
    For one, you get to #play mad #scientist and #experiment with all sorts of recipes and #ingredients. Don't like a certain spice? Leave it out! Want to add something extra to a dish? Go for it! The kitchen is your laboratory, and the possibilities are endless. ????????‍????
    Another #joy of spending all day in the kitchen is the opportunity to #bond with your loved ones. Cooking can be a great way to bring people together, whether it's helping each other chop vegetables or just chatting while the food is cooking. Plus, there's nothing like the satisfaction of sharing a delicious meal with the people you care about.
    Of course, no kitchen adventure is complete without a few mishaps. Maybe you accidentally overcooked the pasta or set off the smoke alarm with your burnt toast, hehehe. But hey, that's all part of the fun! And at the end of the day, the memories (and hopefully some tasty leftovers) are worth it.

  • Had a great time for the 4th weekend but now have to figure out what do with all this food. We made grilled chicken and ribs. So might chop up and make tacos tonight to get another use out of them. With groceries so expensive have to come up with creative ways for leftovers.

    Pytt i panna, also pytt i panne, pyttipannu, is a culinary dish consisting of chopped meat, potatoes, and onions fried, similar to a hash. The term is Swedish for "small pieces in pan". It is a popular dish in Sweden, Norway, Finland, and Denmark, where it bears the name biksemad, literally meaning "mixed food". Traditionally consisting of potatoes, onions, and any kind of chopped or minced meat such as sausage, ham or meatballs, diced and then pan fried, it is often served with a fried egg, pickled beetroot slices, sour pickled gherkin slices, capers and sometimes ketchup or brown sauce. The dish was originally made from leftovers of past meals but now it is also common to prepare pytt i panna from prime ingredients.

  • ???????????? For all the eggplant lovers here, I’m going to share with you my Coconut Amino Glazed Eggplant recipe from the other day. It is very simple, very easy to do, yet very delicious. I hope you will enjoy it as much as I do ????
    Happy Friday everyone! ????
    Coconut Glazed Eggplant
    Ingredients:
    3 eggplants (I recommend using Japanese, Chinese, or Italian variety. The slender ones cook a lot faster)
    6 tbsp roasted sesame oil
    For the coconut amino sauce:
    25ml soya sauce
    50 ml coconut amino
    For garnish - optional:
    3tsp toasted sesame seeds
    1 green onion
    Instruction:

    Gather all the ingredients.
    Set the oven rack in the centre of the oven.
    Preheat the oven at 220ºC
    Make the coconut amino sauce combining 25ml soy sauce with 50ml coconut amino.
    Prepare the eggplant by cutting their stem and calyx off then cut the eggplants in half lengthwise from the stem to the bottom creating boat like halves. With the knife, score the eggplant flesh diagonally, about â…› inch (3 mm) deep and â…› inch (3 mm) wide, into a criss-cross pattern on the open surface. This criss-cross scoring helps cook the eggplant faster and improve the presentation.
    Soak the eggplant in water for 10 minutes to remove the astringency of the eggplant. Blot the eggplants with paper towels or a clean kitchen towel and place them on a baking sheet lined with parchment paper.
    Brush the eggplant flesh with sesame oil. Place the eggplants, cut side down, on the baking sheet.
    Bake the eggplant at 220ºC for about 30 min for the Italian one and 20 if they are smaller like the Japanese one.
    After 30 minutes timer check if the skin is beginning to shrivel and the flesh is soft and remove the baking sheet from the oven. Carefully turn the eggplants over, and brush them with the coconut amino glaze.
    Replace the eggplants in the oven and bake them for other 10 minutes until the top become colourful. Please note that the cooking time varies based on how far the baking sheet is placed from the heating element.
    To serve:
    Sprinkle the baked eggplants with sesame seeds and green onion. Serve immediately.
    To store:
    You can keep the leftovers in an airtight container and store it in the refrigerator for up to 3 days.
