    #PindangDamulag
“Pindang Damulag”, is a Kapampangan delicacy aged to give a unique burst of sour flavor yet still has that distinct sweet taste. It is made of carabao's meat.
This delicacy brings back memories of my childhood too. We struggled when my father died when I was at a young age. Being the eldest among the siblings, I have to help my mother, and to augment the expenses, we sold meat products such as this "pindang damulag" as additional income.
Due to its sourness, those who are not used to it might think it was already expired. For this, we have to give heads-up to first-timers about how it tastes.

  • Pieces of Mama E ????
The side story about this #ProjectPHD post about #LocalDelicacy I don't actually consider as a sad one but more of an inspiration. That things can change.
Believe it or not at the time I never thought that what we were having in the table is not enough or too much. I was just grateful that my family was complete, that we we're all together having a meal. This is something Jeska and I are teaching Dylan too. That's why in our household, mealtime is family time.

    Batutay/ Nueva Ecija's Beef Sausage

This local delicacy has a significant meaning in my life (Mama E)

After each Sunday mass my mom and I will pass by a local store to see if they have "Longanisa/Batutay". Our village was so remote and meat products have only a certain day of delivery and availability.
I remember that a pack is consist of 7 pieces of Longanisa all tied together. My mom can only afford to buy one pack, enough to feed all of us. We are 7 in the family! That makes 1 Longanisa each. Hence my mom will make the best tomato salsa with fish sauce to go along with it of course with rice.

    LIFE THEN. Couldn't believe it.

Now let's talk about this local delicacy.

Longganisa are Filipino sausages that are usually made of ground pork and flavored with spices. But the longganisa in Nueva Ecija are made of beef instead. The batutay is a beef-based longganisa with a distinctive sweet taste, commonly found in Cabanatuan and other nearby areas in Nueva Ecija.

Puritans of the batutay claim that unlike other longganisa, the batutay does not have extenders. It is sweet and savory due to the caramel coating of the sausages.
