Batutay/ Nueva Ecija's Beef Sausage

This local delicacy has a significant meaning in my life (Mama E)

After each Sunday mass my mom and I will pass by a local store to see if they have "Longanisa/Batutay". Our village was so remote and meat products have only a certain day of delivery and availability.
I remember that a pack is consist of 7 pieces of Longanisa all tied together. My mom can only afford to buy one pack, enough to feed all of us. We are 7 in the family! That makes 1 Longanisa each. Hence my mom will make the best tomato salsa with fish sauce to go along with it of course with rice.

Longganisa are Filipino sausages that are usually made of ground pork and flavored with spices. But the longganisa in Nueva Ecija are made of beef instead. The batutay is a beef-based longganisa with a distinctive sweet taste, commonly found in Cabanatuan and other nearby areas in Nueva Ecija.

Puritans of the batutay claim that unlike other longganisa, the batutay does not have extenders. It is sweet and savory due to the caramel coating of the sausages.
